Winemaking
After a long pressing and light settling, the wine is aged and fermented (using indigenous yeasts) in vats for a minimum of 2 years, in contact with the fine lees.
Tasting notes
It’s a real step up for the palate. Indeed, “La Croix Picot” begins lightly, before settling in with precision and intensity. A great deal of delicacy emanates from it.
Lovely white fruit and citrus aromas. Its persistence makes it a perfect match for sea bass with bergamot & vanilla sabayon, and the sweetness of baked butternut. The different textures of the dish are then highlighted by the liveliness of the wine.
Our advice
We recommend a serving temperature of between 12°C and 14°C, with decanting if necessary. It can be enjoyed now, or over the next ten to fifteen years.
