Winemaking
Slow pressing and light settling.
This cuvée will mature for 1 year in barrels: fermentation (using indigenous yeasts) gives way to ageing on fine lees.
Racking is followed by several months in vats before bottling.
Tasting notes
Whether it’s the time spent in barrel or the contact with the lees, “Les Pierres Girard” is a wine with character. The nose opens quickly with notes of ripe fruit: peach, apricot… On the palate, the suppleness provided by the clay and the liveliness balance each other out. It has a lovely aromatic persistence. To accompany it, we can imagine, on the river side, catfish, marinated in lemon and rosemary then lightly grilled on the barbecue. The liveliness of the wine underlines the density of the flesh and the smoky taste. On the seafood side, “bouquet” prawns just seared in olive oil will bring out the best in this cuvée.
Our advice
We recommend a serving temperature of 12°C. It can be enjoyed now, or over the next five to seven years.
