Grape variety
Terroir
Location: Champ-sur-Layon
Soil:Sand and gravel on schist for the Cabernet Sauvignon, clay-schist for the Cabernet Franc.
Winemaking
The extraction is marked and sustained by maceration for around 2 weeks. Fermentation is carried out using indigenous yeasts. Long ageing then rounded out the tannins, in vats for the Cabernet Sauvignon and in barrels for the Cabernet Franc.
Tasting notes
“Le Chant du Bois” is suave and fleshy on the palate. This cuvée is driven by black fruit aromas and a light tannic structure. We suggest you accompany it with grilled rib steak and glazed beet. For the sauce, why not reduce the meat juice with a little red wine, and a touch of balsamic vinegar.
Our advice
We recommend a serving temperature of around 14°C. It can be enjoyed now, or over the next five to ten years.
