Quarts de Chaume Grand cru 2017
In medieval times, there was a special tax. The peasant had to give the lord, the landowner, the best "Quart" of his harvest from the Chaume plots... Today, the quality of this "Quart" is as incredible as ever, as this cuvée testifies.

Terroir
Location: Chaume, Rochefort-sur-Loire hamlet
Soil: Schist, pudding and sandstone. The south-east exposure of the sloping plot, and its proximity to the Layon river, are of particular importance here.
Winemaking
Long pressing contributes to the search for concentrated aromas. Fermentation and ageing take place in barrels.
Tasting notes
The full force of the terroir is expressed in this cuvée. At this stage, notes of candied and roasted fruit add volume to the tasting.
To accompany it, a classic continues to prove its worth: a piece of Fourme d’Ambert cheese to contrast the sweetness of the cuvée. We can also, once again, mention the spice-roasted lobster that previously accompanied the “Zerzilles”.
Despite their differences, these two wines share the same soil, so why not the same dish? Pair Quarts-de-Chaume with lobster, and you’re guaranteed an explosion of flavors!
Our advice
We recommend a serving temperature of between 10°C and 12°C, with decanting if necessary.
Although it can be enjoyed now, this wine has great cellaring potential. So you can wait ten, fifteen years… and much longer. Some of the 30-year-olds in this appellation are still showing signs of youth.
