Winemaking
Slow pressing and light settling. Fermentation (using indigenous yeasts) and ageing are carried out in vats.
Tasting notes
The strength of “Clos de la bergerie” lies in its ability to retain freshness and tension on tasting. Without being exuberant, we discover scents of baked apple, quince and lime blossom.
Its balance makes for daring pairings, such as chicken tagine with apricot confit. For extra sweetness, it can also be paired with a yuzu Savoy cake.
Our advice
We recommend a serving temperature of between 10°C and 12°C, with decanting if necessary. It can be enjoyed now, or over the next ten to fifteen years.
