Soil: Gravelly on schist.
Winemaking
Slow pressing and light settling. Fermentation (using indigenous yeasts) is slow to promote harmonious aromatic expression. The wine is aged in vats.
Tasting notes
The nose, the mouth, everything is explosive for this wine!
It has real power and aromatic complexity. In addition to concentration, botrytis also adds richness. Of course, the wine’s balance is maintained, and notes of gingerbread reveal themselves on the nose.
Enjoy with roasted pineapple seasoned with a long Java pepper with hints of cinnamon. In other words, choose dishes with strong flavors that will stand up to the wine.
Our advice
We recommend a serving temperature of between 10°C and 12°C, with decanting if necessary. It can be enjoyed now, or over the next ten to fifteen years.
